Objective:

Join our skilled team in skinning, trimming, and inspecting carcasses. Our team of butchers process up to 100 beef or bison per day.

The Slaughter Offal Worker is responsible for handling, trimming, cleaning, and processing edible and inedible offal (internal organs and by-products) from harvested animals in compliance with food safety, quality, and animal welfare standards. This position plays an essential role in maintaining efficiency and sanitation within the slaughter department.

Schedule: Monday – Friday 7:00 am to 3:30 pm or until the work is done, Saturday as needed

Key Responsibilities:

• Collect, sort, and process edible (such as hearts, livers, kidneys, tongues, etc.) and inedible offal (such as tripe, lungs, horns, etc.) from slaughtered animals.
• Trim, wash, and inspect organs to ensure compliance with company, USDA, and food safety regulations.
• Operate equipment such as viscera tables, offal conveyors, and washing systems safely and efficiently.
• Identify and separate condemned or contaminated materials according to USDA inspection requirements.
• Package and label edible offal products for further processing or shipment.
• Sort hides for cooling/package to put on trailer to tannery.
• Maintain clean and sanitized work areas to prevent cross-contamination.
• Follow all company safety procedures, including use of personal protective equipment (PPE).
• Report equipment issues, safety hazards, or quality concerns to the supervisor immediately.
• Assist with waste handling and offal disposal processes as required.
• Perform additional duties as assigned by management.
