• Position: Commissary - Production Chef

• At Joseph’s Classic Market, we take pride in offering restaurant-quality meals in a gourmet market setting. Our Prepared Foods Department is the crown jewel of our operation—setting us apart from traditional supermarkets. The Commissary – Production Chef plays a vital behind-the-scenes role by overseeing the production of our chef-prepared meals at our off-site commissary facility. This position is ideal for a seasoned culinary professional who excels in high-volume food production and operational leadership, without direct customer interaction.

Routine Tasks

• * Oversee large-batch food preparation according to established recipes and portioning standards
• * Facilitate packaging, labeling, and distribution of prepared foods to multiple store locations
• * Monitor and maintain product quality, consistency, and freshness throughout production
• * Execute recipes for hot and cold buffet setups and ensure proper plating and portion control
• * Conduct regular line checks, including temperature logging, rotation and dating, and freshness inspections
• * Plan menus and production schedules based on store demand and delivery timelines
• * Maintain accurate inventory records; order and receive ingredients and supplies as needed
• * Supervise and coordinate the work of cooks and food prep staff to ensure efficiency and adherence to quality standards
• * Create and manage weekly kitchen staff schedules; ensure schedules are followed and tasks are completed
• * Train new and existing team members on preparation techniques, safe equipment use, and sanitation procedures
• * Conduct performance reviews, provide coaching and feedback, and support team development
• * Ensure all kitchen equipment is cleaned, maintained, and in proper working condition
• * Ensure compliance with all sanitation, food safety, and kitchen safety regulations in accordance with local, state, and federal guidelines
• * Manage food waste and utilize leftovers in accordance with company guidelines
• * Uphold Joseph’s Classic Market’s quality standards across all products leaving the commissary
• * Collaborate with store chefs and leadership on menu planning, product updates, and feedback

Qualifications

• * Minimum of 2-3 years of Kitchen Management experience in food production and/or kitchen environment
• * Strong understanding of batch cooking techniques, food safety, and commercial kitchen operations
• * Demonstrated ability to lead, train, and motivate a team in a fast-paced setting
• * Strong attention to detail with a focus on consistency and quality control
• * Bilingual in English and Spanish required
• * ServSafe or other food safety certification preferred
• * A passion for serving people

• A Commissary - Production Chef performs their tasks primarily in the commissary kitchen and does not involve customer-facing duties. Must have the ability to clearly articulate the company’s goals and follow up on tasks and projects to achieve those goals. Must be able to resolve conflicts and promote a positive environment where all department associates enjoy coming to work. Work involves walking, standing for prolonged periods, and lifting products weighing up to 50 pounds. Work also includes frequent interaction with fellow employees.
